Beef & Brussels
The metabolic resetting program (hCG) detox is in full force. Not only with me, but many of my patients who are going strong! Patients continually ask me what recipes I’m using. Sharing recipes is always fun and a great idea to keep the creativity alive and strong. And let’s face it…who doesn’t like to be given delicious recipes that are also extremely healthy!?
This combo has been one of my favorite go-to recipes during the detox. It’s simple, yummy, and for sure going to be a staple in my kitchen!
The recipe is for Balsamic-glazed beef tenderloin and “cheezy” (yes with a “z”) roasted Brussels sprouts!
What you’ll need for the tenderloin:
- 2 pounds beef tenderloin, trimmed and tied with butchers string to keep its shape
- 1.5 tablespoons aged balsamic vinegar
- Sea salt
- Cracked black pepper
- Dried rosemary
- 2-3 cloves garlic-minced
Method:
- Preheat oven to 475 degrees F. Line a sheet pan with aluminum foil
- Place beef tenderloin on sheet pan.
- Combine the vinegar, a pinch of salt, and garlic in a small bowl. Spread this mixture on the tenderloin and brush sides to cover with mixture.
- Top tenderloin with fresh cracked pepper and rosemary.
- Roast for about 30-35 minutes depending on how rare you prefer inside.
- Remove pan from oven, let stand for 5 minutes, slice and serve hot.
What you’ll need for Brussels sprouts:
- 1 pound fresh Brussels sprouts
- Sea salt
- 1.5 teaspoons garlic powder
- 1/2 teaspoon onion powder
- 2 teaspoons nutritional yeast
- Juice of 1 lemon
Method:
- Cut ends of Brussels sprouts. Cut each sprout in half.
- Place Brussels sprouts on a baking sheet. Sprinkle lemon juice and 1/4 cup of water over sprouts, tossing to get sprouts damp.
- Sprinkle salt, garlic powder, onion powder and nutritional yeast onto Brussels sprouts, tossing to coat.
- Roast at 475 degrees F for 15-20 minutes, stirring at least once until browned and crispy.
- If desired, sprinkle more nutritional yeast on top before serving.
- Enjoy with your main dish!
***nutritional yeast is deactivated yeast, making it no issue for those who have systemic yeast/fungal health issues. It’s an awesome and nutritious addition to your food, adding a nutty and cheezy flavor. Stay tuned for an informational post on why nutritional yeast is becoming my new obsession!
